Classic Kheer with Today Milk

Ingredients:

  • 1 liter Today Full Cream Milk: Provides the creamy base for the kheer.
  • 1/4 cup Basmati rice: Washed and soaked for 30 minutes.
  • 1/2 cup sugar: Adjust according to taste.
  • 1/4 cup Today Milk Powder: Enhances the richness and creaminess.
  • 1/4 teaspoon cardamom powder: For a fragrant aroma.
  • 2 tablespoons Today Desi Ghee: Adds a rich flavor and silky texture.
  • Handful of chopped nuts (almonds, cashews, pistachios): For added crunch.
  • A pinch of saffron strands (optional): For a luxurious touch.
  • 2 tablespoons raisins: For a sweet burst in every bite.

Instructions

  1. Boil the Milk: In a heavy-bottomed pan, bring Today Full Cream Milk to a boil. Keep stirring occasionally to prevent it from sticking to the bottom.
  2. Add the Rice: Once the milk is boiling, drain the soaked rice and add it to the pan. Cook on low to medium heat, stirring occasionally, until the rice is fully cooked and the milk has thickened. This should take about 20-25 minutes.
  3. Add Today Milk Powder: Mix Today Milk Powder with a little water to form a smooth paste. Add this to the pan to enhance the creaminess of the kheer.
  4. Sweeten It: Add sugar and stir well until it dissolves completely. Adjust the sweetness to your liking.
  5. Flavor with Cardamom and Saffron: Add cardamom powder and saffron strands to the kheer. These spices give the kheer its classic, aromatic flavor.
  6. Ghee and Nuts: Heat Today Desi Ghee in a small pan and fry the chopped nuts and raisins until golden. Add these to the kheer for a rich flavor and crunchy texture.
  7. Simmer and Serve: Let the kheer simmer for another 5-10 minutes until it reaches your desired consistency. It will thicken further as it cools.
  8. Cool and Enjoy: Serve warm or chilled, garnished with more nuts or saffron strands on top.

Tips:

  • Consistency: If you prefer a thicker kheer, let it simmer longer. If it becomes too thick, add a little more milk to adjust the consistency.
  • Serving: Kheer can be enjoyed hot, warm, or cold, making it a versatile dessert for any season.
